Ok, so one of the hardest things about being healthy is eating well. This is especially true for you mamas, because not only do you have to find something that will not send you soaring over your daily calorie count but also will keep the other members of your family from making faces… including the littles.
As things go, there is a lot to be said for not trying to please everyone at the dinner table, but everyone is always a little more cheerful when they’ve been fed something they enjoy and mom is always happier when she doesn’t have to argue about having baked chicken again.
Disclaimer: A LOT of these recipes are from Skinnytaste... and that’s because I LOVE her recipes! I am yet to have a single one that I didn’t absolutely love and have everyone rave about (and in my house my parents are also living with us right now, so that’s four happy adults!). I did try to mix it up a little bit with some of my other go-tos but to be honest the past few months I have been almost exclusively using Skinnytaste since the recipes have been so good and most of them are super easy.
So here are my TEN go-to healthy recipes, which is probably enough for at least two weeks of meal planning (assuming leftovers and/or eating out a few times).

- 15-minute Healthy Roasted Chicken & Veggies – from GimmeDelicious.com
Seriously one of our favorite things to make for dinner, and one of the easiest ever. Tons of delicious veggies, chicken for some protein, and it all actually tastes really good. A great option for weekly meal-prep too if you want something easy and quick to make and take for lunch at work all week.
- One Pan Lemon Herb Salmon and Zucchini – from DamnDelicious.net
To be fair here, there’s no guarantee that your kids will love salmon… and I can’t really help you there. If you can talk them into trying it, this recipe is delicious and doesn’t leave a weird fishy taste in your mouth. Zucchini is so good too.. I’m getting hungry just thinking about this meal. And one pan? How much easier can it get?
- Balsamic Chicken with Roasted Vegetables -from Skinnytaste.com
Oh, hey there Skinnytaste. This chicken dish uses thighs instead of breasts (which, in my opinion, makes it SO much better… I love chicken thighs.) Two thighs is only approximately 400 calories, and all those delicious veggies… yum. I love roasted vegetables and one pan meals… as you can probably tell.
- Oven Baked Chicken Fajitas -from realmomkitchen.com
I might be a little lenient with the “healthy” terminology here, especially since I don’t have any real nutrition info, but this is a baked version of chicken fajitas with lots of veggies, so what you choose for toppings with probably make or break it in terms of the “healthy” factor. However, it’s very tasty, very easy, and a great one for a bigger crowd (we almost always add more chicken and veggies than the recipe calls for).
- Turkey Stuffed Peppers -from Skinnytaste.com
Another fav from Skinnytaste. They are super tasty and use ground turkey instead of beef. They also reheat really well and were easy to feed to my baby without a ton of extra work so extra points for that as well. I had never even had stuffed peppers before but I don’t think I’ll bother making them any other way.

Slow cooker! Yay! So incredibly delicious. This one is probably one of my favorite meals I have ever made. The combination of the fresh ingredients in the bowl with the pork and rice… such amazing flavors… my mouth is watering. I think I’ll make this one again next week, actually.

Another tasty, healthy, one-pan chicken and veggie recipe, this one with a different flavor. The pesto adds a nice freshness and I also love asparagus and sun-dried tomatoes. A nice variation of your standard chicken and veggie bake (plus this one is cooked in a pan instead of baked, so that’s different too.)

One of the first recipes I made from Skinnytaste that totally got me hooked. We didn’t have skewers so we ended up cooking the shrimp in aluminum foil on the grill instead and it was phenomenal. You just feel so good eating something so obviously healthy, and it didn’t leave me feeling like I’d need a second dinner later. So good.

Healthy Crock Pot chili. Need I say more? A little kick to it but not so much it’s hard to eat (I like my spice but my tolerance has gone down the older I get… ha!). Smells as good as it tastes too.

I included this because we eat a lot of fish; often not Tilapia because I am blessed with a father who loves to fish and catches fresh grouper and snapper all summer for us. However I imagine any mild white fish would taste good in taco form. Fish tacos are just the bomb and one of my favorite ways to eat fish; so fresh and light, plus anything with lime and cilantro is just great.
